Locked Menu Selection, Meal to Replace With

Most of our customers have fixed menus locked to a date. When a meal no longer is available on this date, could we have an option to specify a replacement for that meal, rather than it being random? We find the random menu option normally picks something the least preferrable, like a vegan dish for a meat eater or a fish dish for a customer who never selects fish meals.
